2 black mission figs
8 slices brown sugar bacon
2 peaches
1/4 lb Nduja (spicy spreadable salami)
1/4 lb fresh fava beans (in pods)
10 chopped mint leaves
3 oz cured whole muscle salumi
(e.g. lomo, prosciutto)
8 slices toasted crostini
2 tbsp Meyer lemon olive oil
salt, pepper
Figs Wrapped in Bacon/Peaches and Nduja:
- preheat oven to 500°
- slice figs in quarters, wrap each piece in bacon
- slice peaches in half (remove pits) and place one slice of Nduja on each half
- place all in oven until bacon is cooked, 5-10 minutes
- drain figs on paper towel, toothpick, serve
- slice peaches in half, toothpick, serve
Fava Crostini:
- shuck fava beans, chop, then lightly mash, but retain texture
- add Meyer lemon olive oil, mint, salt and pepper to taste
- spoon onto crostini, top with salumi, serve
